Having Family Over

Keith and I love having people over. A few weeks ago we finally got His brother Kevin and his family over. It has been since Keith moved in that they were all last over here. We were worried we would have to Toddler proof our house with our Nephew Wilson coming over, but he did awesome.

Wilson quickly feel in love with sadie and spent most his day running and calling after her. The rest of the day consisted of playing the Wii, taking a tour of the lofts, going for a quick walk by the river, making homemade mini pizzas, talking and laughing… and playing Find It.

Kosovar Celebration

Just like last year, all us gals that have spent our summers in Kosova met together to celebrate the 2nd independence of Kosova!

Of course there was american made albanian food along with great music and great fellowship.

In addition to all the yummy things above, we also had turkish coffee, russian coffee, pretzels, eruo creme, peach, cherry, strawberry and blueberry juice, and kikiriki!

Our 1/2 weekend getaway

Since Keith and I both “work” for the church we aren’t able to get a full weekend off many times during the year. My grandmother has a cute cabin up in cleveland, GA and for a few months now Keith and I have been saying we needed to take a one night trip up to the cabin. We finally worked it out to go last weekend… which just happened to be valentines weekend.

We were excited about the night stay and our plans for Saturday. We wanted to eat at this old country family style restaurant and go to the new Babyland General.

As the week inched closer to Friday, so did the forecast of snow. Lots of snow. Keith and I still wanted to go for the night, so we left out and when we arrived we had about two inches of snow there.

We got in and turned on the heat. I cooked our Lemon chicken we loved so much a few weeks ago. It did not turn out as good, so that made me a bit upset. We watched about 4 movies haha. My grandmother had all these awesome old VHS’s we watched Richie Rich… AWESOME! HEHE

Saturday we woke up and enjoyed some time in the snow.

As the day went on we got ready for our planned day. We drove into town to go to Babyland General… to find…. it was closed… AHHH.. BUT WE TOOK A PICTURE ANYWAY!

Then we drove on to find that our food place was closed also. Man what bad luck. Keith and I drove into Helen and walked around in the frigid cold. It was so windy. We ended up driving back going to Cracker Barrel and went to see a movie. It was a good weekend to just take some time to chill out and not have to stress about “life” stuff. It was great.

Super Bowl Party

Keith and I recently got a new tv, so we decided that we just HAD  to have a super bowl get together!

I of course was rooting for the Saints while everyone else wanted the colts to win. To that i say to everyone …. BOOOOOOOOYALLL!

Yummy Dinner

Keith and I had a super yummy dinner last night. It only has 5 ingredients and is super easy to make.

Here is the recipe below:

Broiled Lemon-Garlic Chickenimage

Ingredients

  • 2 lemons
  • 2 tablespoons unsalted butter, at room temperature
  • 2 to 3 cloves garlic, finely chopped
  • Kosher salt and freshly ground pepper
  • 2 half chickens (3 to 3 1/4 pounds total)

Directions

Position an oven rack about 8 to 10 inches from the broiler and preheat. Grate the lemon zest and combine in a small bowl with the butter, garlic, 1/2 teaspoon salt, and pepper to taste. Mash with a fork to make a smooth paste.

With your fingers, gently loosen the skin on the chicken breasts, legs and thighs. Spread the flavored butter under the skin as evenly as possible. Halve the lemons and squeeze 2 halves over the chicken; season with salt and pepper.

Place the chicken skin-side up on a broiler pan (or a rack on a baking sheet). Position the halves about 2 inches apart with the thick parts of the legs facing the center. Arrange the remaining 2 lemon halves cut-side down next to the chicken.

Broil the chicken until the skin is light brown and crisp, about 8 minutes. If the chicken browns too quickly, lower the oven rack. Flip the chicken and the lemons and continue to broil until almost cooked through (a thermometer inserted into the thickest part will register 160 degrees), about 15 minutes. Remove the lemons, if browned; turn the chicken again and broil until the skin is brown and crisp and the thermometer registers 165 degrees, about 2 more minutes. Serve the chicken with the broiled lemons for squeezing on top.

I am sorry for the lack of postings lately. I feel like we have been running at 1000 mpgs, so it has been hard to take a moment to give an update. Things going on this month are:

I (Kaylee) Started Full-time at PureFUN! (www.purefuninc.com). I will be working to get new customers and also on marketing plans.

 

Keith starts his new classes at Luther Rice Seminary next week. He is taking 3 classes this semester. Uping his load just a bit. But i know he will still do great with it. He got all A’s last semester so YEA KEITH!

 

We are both still loving our ministry’s with Journey Church (www.lifejourneytogether.org). Keith is loving the Youth and has some great plans for this upcoming semester. It is awesome to see how God is using him and giving him the knowledge he needs. He is doing great and i am so proud of him. The band is going well with me too!

 

HOW COULD I FORGET…. Keith and I won the Christmas door decorating contest in the Lofts. We won a $25.00 Giftcard to Long Horns. So we were so excited about that. They featured pictures of our door in the monthly loft newsletter!
